Date Cake

Hello everyone. Today, I wanted to show you how to make a super simple, super delicious date cake. I have tried to make this many times in many different ways to perfect the recipe. It is very rich in nutrition. As you may know, dates have a lot of iron and are super healthy. I hope you try this recipe, and let me know how it works out for you.

Ingredients:

~2 cups of all-purpose flour

~1 tsp of baking soda

~1/2 a tsp of salt

~1/2 a cup of walnuts, chopped (optional)

~1/2 a cup of butter, softened

~3/4 of a cup of sugar

~2 eggs

~1 tsp of vanilla

~1 1/2 cups of dates, chopped ~4 oz of date paste

~1/2 of a cup of date infused water

Directions:

To Prepare the Dates:

~In a small saucepan, boil about 1 1/2 cups of dates into some water.

~Then, peel the skin off of the dates. It should be easy, as we boiled the water.

~Finally, chop each date in half, so that you are left with smaller pieces. Reserve 1/2 a cup of the date infused water for later.

To Make the Cake:

~Preheat the oven to 350 degrees Fahrenheit.

~In a small bowl, whisk together the flour, the baking soda, the salt, and if you are using them, the chopped walnuts.

~Then, in a large bowl, cream together the butter and the sugar until it becomes light and fluffy. After that, add in each egg, one at a time, mixing after each addition. Add in the vanilla. After that, add in the date paste, the dates, and the date infused water. Mix that together until it is well combined; it may take a while.

~Pour that into a pan and bake it for 50-60 minutes, or until a toothpick inserted comes out clean.
