Quick and Easy Harira Soup for Ramadan
Hello everyone. Ramadan is a month on the islamic calendar where muslims fast from sunrise to sunset. Ramadan started 1 week ago. After a whole day of fasting, the best way to break your fast is with a nice, warm, soothing soup. In the next few posts, I will share some very delicious recipes for different kinds of soups. Today, I will share with you a recipe for a very quick and easy Harira Soup. I hope you try this recipe and enjoy!
Ingredients:
~1 medium onion, finely chopped
~~1/4 of a cup of oil
~1 cup of orzo pasta (bird tongue pasta)
~3 cups of broth
~8 oz of chick peas (canned or boiled)
~1 tbsp of tomato paste
~1 tbsp of dried mint, crushed
~Salt and pepper
~Small cubes of beef or chicken, cooked (optional)
Directions:
~In the oil, stir-fry the onions, until they become a golden-yellow color.
~Add in the pasta and stir-fry it with the onions, until it becomes a light brown color. If you are using them, add the small pieces of beef or chicken.
~Add the broth, the chick peas, the tomato paste, the dried mint, and lastly, the salt and pepper.
~Let it boil, until the pasta cooks.
~Serve while it's hot and enjoy :)
